Southern-Style Well-Seasoned Roast (Beef or Pork)

A photo of a southern-style roast. The roast is a beef roast with a golden-brown crust. It's placed on a wooden cutting board and has a sprinkle of fresh herbs. The background has a rustic setting, with a white plate, a knife, and a few herbs.

Slow-cooked, fall-apart tender, and seasoned to perfection

Ingredients:

  • 1 (3-4 lb) beef chuck roast or pork shoulder

  • 3 tbsp olive oil or butter

  • 1 tbsp salt

  • 1 tbsp black pepper

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp smoked paprika

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ½ tsp cayenne pepper (optional, for a little kick)

  • 1 tbsp Worcestershire sauce

  • 2 cups beef or chicken broth

  • 1 cup red wine (or water)

  • 1 onion, sliced

  • 4 garlic cloves, minced

  • 3 carrots, cut into chunks

  • 3-4 small potatoes, cut into quarters

Instructions:

  1. Season the roast – Rub the roast generously with salt, black pepper, garlic powder, onion powder, paprika, thyme, rosemary, and cayenne (if using). Drizzle Worcestershire sauce over the top and rub everything in real good. Let it marinate for at least an hour (overnight is even better!).

  2. Sear for flavor – In a large cast-iron skillet or Dutch oven, heat olive oil or butter over medium-high heat. Sear the roast on all sides until golden brown (about 3 minutes per side).

  3. Layer the flavors – Add sliced onions and minced garlic around the roast, then pour in broth and red wine.

  4. Add the veggies – Toss in carrots and potatoes around the roast.

  5. Slow cook to perfection – Cover and bake at 300°F for 3-4 hours (or cook in a slow cooker on LOW for 8 hours) until the meat is fall-apart tender.

  6. Serve & enjoy! Slice or shred the roast, spoon the rich gravy over the top, and serve with cornbread or rice.

💡 Pro Tip: If you want that extra-rich gravy, remove the roast once it’s done, strain the juices, and thicken them with a little cornstarch slurry.
