(Golden, slightly sweet, and perfect with butter or honey!)
Ingredients:
β 1 cup yellow cornmeal
β 1 cup all-purpose flour

cup sugar (optional, but I love a little sweetness!)
β 1 tbsp baking powder
β Β½ tsp salt
β 1 cup buttermilk (adds moisture and tang!)
β 2 eggs
β Β½ cup melted butter (plus extra for brushing!)
β Β½ tsp vanilla extract (trust me, it makes a difference!)
Instructions:
1οΈβ£ Preheat oven to 400Β°F. Grease a cast-iron skillet or baking pan.
2οΈβ£ In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
3οΈβ£ In another bowl, mix buttermilk, eggs, melted butter, and vanilla.
