Roasted Vegetables with Garlic & Herbs
(Simple, flavorful, and the perfect balance to a rich meal!)
Ingredients:
✔ 2 cups baby carrots
✔ 2 zucchini, sliced
✔ 1 red bell pepper, chopped
✔ 1 cup cherry tomatoes (adds a pop of sweetness!)
✔ 3 tbsp olive oil
✔ 3 cloves garlic, minced
✔ 1 tsp salt
✔ ½ tsp black pepper
✔ ½ tsp smoked paprika
✔ 1 tsp dried Italian herbs (or fresh thyme & rosemary!)
Instructions:
1️⃣ Preheat oven to 400°F. Line a baking sheet with parchment paper.
2️⃣ Toss all vegetables with olive oil, garlic, and seasonings. Spread evenly on the baking sheet.
3️⃣ Roast for 20-25 minutes, stirring halfway, until tender and slightly caramelized.
4️⃣ Serve hot with any meal! Easy, healthy, and full of flavor!
