Roasted Vegetables with Garlic & Herbs

(Simple, flavorful, and the perfect balance to a rich meal!)

Ingredients:

2 cups baby carrots
2 zucchini, sliced
1 red bell pepper, chopped
1 cup cherry tomatoes (adds a pop of sweetness!)
3 tbsp olive oil
3 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
1 tsp dried Italian herbs (or fresh thyme & rosemary!)

Instructions:

1️⃣ Preheat oven to 400°F. Line a baking sheet with parchment paper.
2️⃣ Toss all vegetables with olive oil, garlic, and seasonings. Spread evenly on the baking sheet.
3️⃣ Roast for 20-25 minutes, stirring halfway, until tender and slightly caramelized.
4️⃣ Serve hot with any meal! Easy, healthy, and full of flavor!
